Crock Pot Peach Cobbler
1/3 cup granulated sugar
1/2 cup packed brown sugar
3/4 cup buttermilk biscuit and baking mix (Bisquick)
2 eggs
2 tsp. vanilla extract
1 Tbsp. butter, melted
Half of a 12 oz. can evaporated milk
2 cups peaches, fresh, frozen, or canned, sliced (if canned, drain slightly)
3/4 tsp. ground cinnamon
Combine sugar, brown sugar, and baking mix in a large mixing bowl. Add eggs and vanilla. Mix well. Add butter and milk. Mix well. Add peaches and cinnamon. Mix well. Pour into greased crock pot. Cover an cook on low 6 to 8 hours.
Serve warm with whipped cream or vanilla ice cream. Great warm dessert for a cold winter evening.
Makes 6 serving

Orange Yams
6 to 8 medium yams
2 apples, peeled and thinly sliced
3 Tbsp. butter, melted
2 tsp. orange zest
1 cup orange juice
2 Tbsp. cornstarch
1/2 cup packed brown sugar
1 tsp. salt
Dash of ground cinnamon and/or nutmeg
Garnish: chopped pecans
Place yams and apples in crock pot. Stir in butter and orange zest. Combine remaining ingredients in small bowl. Pour over yams and apples. Cover and cook on high 1 hour and then on low 2 hours or until apples are tender. Garnish if desired.
You can substitute a 40 oz. can of yams or sweet potatoes or approximately 4 cups cubed butternut squash for the sweet potatoes.

Autumn Brisket
3 lb. boneless beef brisket
salt and pepper to taste
1 lb. head cabbage, cut into wedges
1 large (3/4 lb.) sweet potato, peeled and cut into 1 inch pieces
1 large onion, cut into wedges
1 medium Granny Smith apple, cored and cut into 8 wedges
2 10 3/4 oz. cans cream of celery soup
1 cup water
2 tsp. caraway seeds (optional)
Garnish: fresh parsley
Place brisket in crock pot. Sprinkle salt and pepper over meat to taste. Top with cabbage, sweet potato, and onion. Season to taste with salt and pepper. Place apple wedges over vegetables. Combine soup, water, and caraway seeds in a medium bowl. Spoon mixture over brisket and vegetables. Cover and cook on high 4 to 5 hours or on low 8 to 9 hours or until brisket and vegetables are fork-tender but not dry or mushy. Garnish if desired.

Ice Cream Oreo Cake
1 lb. Oreo's, crushed (save 1 cup crushed Oreo's)
4 Tbsp. butter, melted
Mix together (white cream and all) and put in bottom of 9 x 13 pan.
1/2 gallon vanilla ice cream, sliced into 6 slices
Spread 1/2 jar (13 ox.) marshmallow creme, Layer of hot fudge sauce, Layer of Cool-Whip, sprinkle with reserved crushed Oreos, Freeze for 3-4 hours.

Mom's Tuna Pea Salad
2 (6 oz.) cans of tuna
6 hard boiled eggs, chopped
Mayo (best foods)
2- 3 green onions, chopped
1/2 container of potato sticks (Pik Nik shoestring potatoes)
1/2 -1 cup frozen peas
salt
pepper
lettuceMix together all ingredients in a bowl. Lay on a bed of lettuce on individual salad plates. The shoestring potatoes will get soggy in leftovers.

Garlic Roasted Chicken
5 to 6 lb. whole chicken
Kosher salt
pepper
whole head of garlic
1 lemon
1 large onion
4 carrots
2 potatoes
butter
When you bring chicken home from the store- salt it and store it in the fridge until ready to use.
Sprinkle inside of chicken with salt and pepper. Cut in half a whole head of garlic (don't even peel it) and place inside chicken. Quarter the lemon (unpeeled) and stuff inside chicken. Tie up the legs with string and tuck the wings under itself. Place it roaster pan. Not too large.
Place in bottom of pan a sliced up large onion, 4 carrots, sliced and 2 potatoes, cut. Place chicken on top of vegetables. Dry off chicken with a paper towel and brush the outside skin with melted butter. Sprinkle some butter onto the vegetables too. Sprinkle top of chicken with salt and pepper. Cook in a 425 degree oven for 1 hour 15 minutes to 1 hr. 30 minutes. Cut between leg and thigh. When the juices are clear it's done. Take out the chicken and cover with foil. Let it sit. Put the vegetables back in the oven for another 15 minutes.
Cut up the chicken into large slices (to retain the moisture). To serve place on a platter along with vegetables.

Triple Berry Blast
1 cup frozen mixed berries
1 cup soy milk ( do not use vanilla-flavored soy milk because it will make this smoothie too sweet)
1/2 cup sliced banana
2 tsp. honey
Combine berries, soy milk, banana and honey in blender. Blend about 30 seconds or until smooth and thick. Pour into 2 sugar-dipped glasses. Serve immediately.
Makes 2 (10 oz.) servings

Heat oven to 350 degrees. Grease bottom and sides of a 9-inch square pan with shortening or cooking spray. In small bowl, mix cracker crumbs, butter and sugar thoroughly with fork. Press evenly in bottom of pan. Refrigeratae while preparing cream cheese mixture.
In small bowl, beat cream cheese with electric mixer on medium speed until light and fluffy. Gradually beat in milk until smooth. Beat in lime juice and lime peel. Spread over layer in pan. Bake about 35 minutes or until center is set. Cool 30 minutes. Cover loosely; refrigerate at least 3 hours until chilled. For bars, cut into 6 rows by 6 rows. Garnish with additional lime peel. Store covered in refrigerator.

Cool completely, about 1 hour. Store tightly covered

2 cups flaked coconut
1 cup chopped mixed nuts

Ina bowl, combine 2 cups flour, oats, brown sugar, baking soda and salt. Cut in butter until crumbly. Set half aside for topping. Press the remaining crumb mixture into a greased 13 x 9 baking pan. Bake at 350 degrees for 15 minutes. Sprinkle with the chocolate chips and pecans. Whisk caramel topping and remaining flour until smooth; drizzle over top. Sprinkle with the reserved crumb mixture. Bake for 18-20 minutes or until golden brown. Cool on a wire rack for 2 hours before cutting.

Remove foil; bake 20 minutes longer or until a knife inserted near the center comes out clean. Refrigereat any leftovers.

2 onion slices, separated into rings
Sprinkle dill, lemon-pepper, salt if desired and garlic powder over salmon. Place in a large resealable plastic bag or shallow glass container. Combine brown sugar, broth, oil, soy sauce and green onions; pour over the salmon. Cover and refrigerate for 1 hour, turning once. Drain and dicard marinade. Place salmon skin side down on grill over meduim heat; arrange lemon and onion slices over the top. Cover and cook for 15-20 minutes or until fish flakes easily with fork.

Bake at 300 degrees for 20-25 minutes or until set (crust will not brown). Cool. In a mixing bowl, beat cream cheese, confectioners' sugar, vanilla an salt until smooth. Fold in whipped topping. Spread over crust.
For topping, dissolve gelation in boiling water; stir in raspberries. Chiill for 20 minutes or until mixture begins to thicken. Spoon over filling. Refrigerate until set. Cut into squares; garnish with whipped topping and mint if desired;

Chess Squares
1 box yellow cake mix
3 eggs
8 oz. cream cheese, softened
1/2 cup butter, melted
4 cups (1 lb.) powdered sugar
Preheat oven to 300 degrees and spray a 9x13 dish with cooking spray. Mix cake mix, melted butter and one egg to a soft dough. Press into the bottom of the pan. Mix powdered sugar, softened cream cheese and the remaining two eggs until smooth, about 1-2 minutes. Pour on top of crust. Bake at 300 for 40-50 minutes until top is golden brown.

When cake is cool, take wooden spoon handle and poke holes in cake, add strawberries and juice to top of cake. Then frost with pudding/cool-whip. Cover and set in fridge for a few hours.
Just before serving garnish with whole strawberries cut into slices. Keep leftovers in fridge. Great dessert for a summer BBQ.

6-8 chicken tenders or 2-3 chicken breasts
8 leaves of iceberg lettuce
3 Tbsp. canola oil
1 cup onion, diced
2 garlic cloves, minced
1 tsp. soy sauce
1/4 cup cashews, chopped
sauce
sauce: 4 Tbsp. soy sauce, 2 Tbsp. white vinegar, 4 Tbsp. brown sugar
Cut chicken into cubes. Put 2 Tbsp. oil in pan and heat up at medium to medium high heat. Add chicken and pan fry until fully cooked. Chop onions, garlic and cashews. Mix all the sauce ingredients in a small bowl and set aside while the chicken is cooking. Wash lettuce and separate leaves. Once chicken is fully cooked remove from the oil and set aside. Add 1-2 Tbsp. of oil to pan and add onions, garlic and 1 Tbsp. soy sauce to pan and brown until tender. Then add cooked chicken, sauce and cashews. Mix and saute for a few minutes and remove from heat.
Mix up another batch of sauce for dipping and cook some white rice. Spoon cooked rice, rice noodles (optional) and chicken mixture into lettuce. Add extra sauce to taste and serve with a side of white rice with sauce on top.

sauce: 4 Tbsp. soy sauce, 2 Tbsp. white vinegar, 4 Tbsp. brown sugar
Cut chicken into cubes. Put 2 Tbsp. oil in pan and heat up at medium to medium high heat. Add chicken and pan fry until fully cooked. Chop onions, garlic and cashews. Mix all the sauce ingredients in a small bowl and set aside while the chicken is cooking. Wash lettuce and separate leaves. Once chicken is fully cooked remove from the oil and set aside. Add 1-2 Tbsp. of oil to pan and add onions, garlic and 1 Tbsp. soy sauce to pan and brown until tender. Then add cooked chicken, sauce and cashews. Mix and saute for a few minutes and remove from heat.
Mix up another batch of sauce for dipping and cook some white rice. Spoon cooked rice, rice noodles (optional) and chicken mixture into lettuce. Add extra sauce to taste and serve with a side of white rice with sauce on top.

Chocolate Chip Cookie Bliss
1 cup shortening
2 sticks butter, room temperature
1 cup sugar
1 1/2 cups brown sugar
2 extra large eggs
2 tsp. vanilla
4 cups flour
1 tsp. salt
2 tsp. baking soda
chocolate chips
Add shortening, butter, sugar and brown sugar to mixer. Cream together until light and fluffy. Add eggs and vanilla to mix. In a separate bowl, sift together flour, salt and baking soda. Add a cup at a time to the mixture. Add your chocolate chips . Refrigerate until chilled. Roll into balls. Put into plastic bag and freeze. Heat oven to 375 degrees. Bake 8-12 minutes or until they start to brown. Let set on cookie sheet.

...Don't be tempted to substitute all-purpose flour for the cake flour, as doing so will make a dry, tough cake. If you can't find buttermilk, you can substitute an equal amount of plain, low-fat yogurt. When topping the cake, take care to not push the crumbs into the batter. 4 bags of microwave popcorn (sift out the unpopped kernels)
1/2 cup butter
4 1/2 cups sugar
2 1/2 cups brown sugar
1 (12 oz.) can evaporated milk
2 cups heavy whipping cream
1 tsp. salt
1 1/2 cups light corn syrup
Bring to a boil the butter, sugars, milk and cream. Then stir in salt and corn syrup. Boil to a "softball" stage. Stirring constantly. Pour over popped corn, mix well. Lay out to "dry" on wax paper.

12 oz. grilled chicken breast, sliced
1 cup diced avocado
1 cup diced mango (from 1 1/2 mango's)

For the vinaigrette:

For the vinaigrette:

6 tablespoons butter
6 tablespoons shortening
3/4 cup powdered
sugar
1 1/2 cups plus 2 tablespoons flour

Fresh-Squeezed Lemonade or Strawberry Lemonade
2 cups sugar
8 1/2-10 1/2 cups water, divided
1 cup fresh lemon juice (about 5-6 large lemons)
1/4 cup fresh lime juice (about 3 limes)
ice cubes for serving
Strawberry Sauce ice cubes for Strawberry Lemonade
Combine sugar and 2 1/2 cups water in a medium saucepan over medium heat. Stir until sugar has dissolved and then simmer 5 minutes. Remove from heat and cool about 20 minutes.
Add lemon and lime juices to sugar syrup. Pour lemon-lime mixture into container. Let stand one hour and then strain mixture and store until ready to serve.
When ready to serve, mix lemonade base with 6-8cups cold water. Start with 6 cups and then adjust according to your taste. Six cups will be very sweet; 8cups will border on watery.

After five minutes, remove from heat and allow to cool before blending. When cool enough, transfer the mixture to blender and pulse until desired consistency is reached. Refrigerate unused sauce for up to 1 week or freeze for up to 3 months.
Place in ice cube containers and freeze. I doubled the recipe. Add to lemonade to make Strawberry Lemonade.

24 pieces of good honey ham
24 small slices Swiss cheese
1/3 cup mayonnaise
1/3 cup miracle whip
In a small bowl, mix together mayonnaise and miracle whip. Spread onto both sides of each roll. Place a slice of ham and a slice of Swiss cheese inside of each roll. Close rolls and place them into a large baking dish or heavy cookie sheet. Place very close together.

1/2 cup butter, melted
1Tablespoon minced onion
1/2 teaspoon Worcestershire sauce
1 Tablespoon poppy seeds

7-Minute Frosting
Combine in top of double boiler:
2 egg whites (1/4 cup)
1 1/2 cups sugar
1/4 tsp. cream of tartar or 1 tbsp. light corn syrup
1/3 cup water
1 tsp. vanilla
Mix ingredients together in the top of a double boiler. Place over boiling water. (Water should not touch the bottom of the bowl your frosting mixture is in.) Beat on high for 7 minutes over the boiling water. After 7 minutes remove from heat and add 1 tsp. vanilla. Beat on high for a couple more minutes until spreading consistency.
Great for cupcakes. Tastes great and is quick.

Best ever Snickerdoodles
2 cups sugar, divided
1 cup Crisco Butter Shortening
2 large eggs
2 tablespoons milk
1 teaspoon vanilla extract
2 3/4 cups Pillsbury Best, All Purpose Flour
2 teaspoons cream of tartar
1 teaspoon baking soda
3/4 teaspoon salt
2 teaspoons ground cinnamon
Heat oven to 400 degrees F. Combine 1 1/2 cups sugar, shortening, eggs, milk and vanilla in bowl of electric mixer. Beat at medium speed until will blended. Combine flour, cream of tartar, baking soda and salt in medium bowl. Add gradually to shortening mixture at low speed. Mix just until blended.
Combine remaining 1/2 sup sugar and cinnamon in small bowl. Shape dough into 1-inch balls. Roll in sugar-cinnamon mixture. Place 2 inches apart on ungreased baking sheets. Bake 7 to 8 minutes. Cool 2 minutes on baking sheets. Place on cooling racks to cool completely.

6 slices crisp bacon, crumbled (3/4 cup)
4 oz. cheddar cheese, diced (1/2 cup)
4 green onions, sliced (1/2 cup)
2 medium Roma tomatoes, diced (1 cup)

Cook pasta according to package directions. Rinse in cold water to chill; drain.
In large bowl, combine all ingredients; mix thoroughly.

1/4 cup red wine vinegar
2 tsp. salt
1/2 tsp. pepper
2 cups red grapes
1 cup pecan, coarsely chopped
1/2 cup Craisins
Cook pasta according to package directions; drain. In a large bowl, combine all ingredients except grapes, pecans and Craisins. Marinate mixture in refrigerator for several hours or overnight. Add grapes, pecans, and Craisins just before serving. Makes about 12 cups.

Apple Crumb Pie
1 9-inch pie shell, unbaked
6 cups cooking apples, peeled and thinly sliced
1 Tbsp. lemon juice
3/4 cup sugar
1 Tbsp. flour
1/2 tsp. cinnamon
1/8 tsp. nutmeg
Sprinkle apples with lemon juice. Blend sugar, flour, cinnamon, and nutmeg together. Add apples and gently toss until coated. Spread apples in pie shell. Sprinkle with crumb mixture. Bake at 375 degrees for 45-50 minutes or until crust is golden brown. Cool on wire rack.
Crumb Topping- Stir together 1/2 cup flour and 1/2 cup brown sugar. Cut in 1/4 cup butter until coarse and crumbly.

Turkey & Veggie Meatloaf Mini
1/2 cup grated onion
7 tbsp. ketchup, divided
1 1/4 lb. lean ground turkey
3 cups shredded broccoli coleslaw, chopped
1/2 cup fat-free liquid egg substitute
1/2 cup quick-cooking oats
2 tsp. garlic powder
1 tsp. salt
1. Preheat oven to 350 degrees. Line 9 compartments of a muffin pan with baking cups or spray with nonstick spray.
2. Combine all ingredients except 3 tbsp. ketchup in a mixing bowl. Distribute mixture evenly among cups. Brush 1 tsp. ketchup on top of each meatloaf.
3. Bake until firm with lightly browned edges, 30 to 35 minutes.
Makes 9 muffins, each one is only 142 calories.

Pecan Butterscotch Bars

1 tsp. salt
2 tsp. baking powder

Heat to combine on stove melted butter and brown sugar. In bowl combine flour, salt, and baking powder together. In small bowl crack eggs and add the vanilla. Mix together. Add sugar mixture to flour mixture. Add eggs to flour mixture. Mix to combine and add pecans.
Bake 25 to 30 minutes. It should look underdone.
