Lime and Parmesan Popcorn

 2 cups plain air-popped popcorn

olive oil cooking spray

1 Tbsp Parmesan cheese

1 tsp lime zest 

pinch of chili powder

pinch of salt


Lightly coat popcorn with cooking spray; toss with Parmesan, lime zest, chili powder and salt.


Serves 1

Make your own Microwave Popcorn

 1/4 cup popcorn kernels

1 brown lunch bag


Put popcorn in bag and set in microwave for 2 1/2 minutes. Sprinkle with salt and a squeeze of honey for sweet and savory treat.

Popcorn Balls

 12-14 cups popped popcorn (1/2 cup unpopped kernels)

1/2 cup sugar

1/3 cup water

3 Tbsp molasses

1 Tbsp butter

2 Tbsp white vinegar

1 tsp vanilla extract

1/2 tsp baking soda


1.  Pop the popcorn in one Tbsp oil and set aside in a large bowl.  A large heavy-bottom kettle works well..

2.  In a 4 quart heavy-bottom kettle, combine the sugar, water, molasses, butter, and vinegar.  Bring to a boil over medium-high heat, stirring until the mixture begins to boil.  Continue to boil until the temperature reaches 235 degrees on a candy thermometer.

3.  Remove from heat and add the vanilla an baking soda.  Stir to combine until the mixture is lighter in color and foamy.

4.  Pour over prepared popcorn.

5.  Stir until all the popcorn is coated in the caramel mixture.  Allow to cool slightly and become sticky, 3-5 minutes.  

6.  With well-oiled hands, create balls approximately 3 inches in diameter.  If the balls are not sticking together, allow popcorn additional time to cool.

Cinnamon Popcorn


2 tsp can sugar
2 tsp pure maple syrup (optional)
1/3 tsp ground cinnamon
1/3 cup corn kernels (5 cups cooked)
2 pinches sea salt


Air pop the popcorn. Combine and toss together in a large bowl. Serve immediately.

Spicy Ranch Popcorn

8 cups popped popcorn
½ cup canola oil
1 Tbsp red pepper flakes, 1 to 2 Tbsp
16 oz package Original Ranch dressing or dip mix, 1 package

  1. Place popcorn in a very large bowl.
  2. Mix the remaining ingredients together in a small bowl or jar.
  3. Pour over popcorn and stir.
  4. Continue stirring the popcorn every 10 minutes or so for at least an hour.
  5. Serve and enjoy!

Snow Day Snack Mix

12 cups popped popcorn
16 oz white candy coating
3 cups miniature pretzels
10 oz M&Ms
½ cup sprinkles
10 oz miniature marshmallows

  1. Line a large baking sheet with parchment paper or a silicone mat.
  2. Place popped popcorn on top of the parchment paper.
  3. Melt candy coating according to package directions and pour over the top of the popcorn. Use tongs to toss to evenly coat popcorn
  4. Add the pretzels and M&Ms and toss with tongs to oat again.
  5. Add sprinkles and marshmallows and toss again.
  6. Let the snack mix set for 30 minutes before breaking apart and serving.
  7. Sore leftovers in an airtight container.

Homemade Caramel Popcorn

1 lb brown sugar
14 oz can sweetened condensed milk
1 cup Karo syrup (light corn syrup)
1/2 cup butter
1 cup unpopped popcorn

Pop your popcorn in an air popper machine.  May machine only allows 1/2 cup of kernels at a time so I had two separate bathes that I had to pop.  Cook the brown sugar, Karo syrup, and 1/2 cup of butter over the stove on medium - high heat and bring to a boil.  Add the sweetened condensed milk.

Stir continually for about 3 to 4 minutes until it gets to the soft ball stage (it clings together when you drop some in cold water). It will burn if you cook it too long so make sure you are stirring continuously and watch it closely.  When it is finished cooking, take your pot off the stove and pour the caramel sauce over your air popped popcorn.  Mix until all the popcorn is completely coated.  You will need a very large bowl to mix it all together.
