German Cucumber Salad (Kurkensalat)

 1 large or 2 small cucumbers

6 Tbsp whipping cream

3 Tbsp sunflower oil or vegetable oil

1 1/2 Tbsp white wine vinegar

2 Tbsp sugar

2 Tbsp chopped dill

4 Tbsp chives

splash of lemon juice

1 tsp salt

1/2 tsp black pepper


Peel the cucumber. Use a mandolin slicer and cut the cucumber into fine, thin slices.  Place slices in a colander to drain our any water for a few minutes.  

In a separate bowl, combine the oil, vinegar, whipping cream, lemon juice, salt, pepper, and sugar.  Mix thoroughly.  Cut your washed dill and chives.  Add the herbs to the dressing and mix again.  Pour the dressing over the cucumbers and mix.

Cucumber Salad

 1 cucumber, peeled, chopped into slices

1/2 Vidella onion, cut into rings,(punch out)

1 large tomato, cut into wedges, can peel the skin

1 tsp salt

1 tsp pepper

1/4 cup sugar

1 cup water

1/2 cup white vinegar

1/4 cup olive oil

dill

 

In  large bowl, add cucumber, onion and tomatoes.  Add seasonings. Mix together.  Sprinkle dried dill on top.  Refrigerate and Serve.

Turkey and Cheese Cucumber Rolls

 1 ripe avocado

1 fresh garlic clove

2 tsp fresh lime juice

sea salt and freshly ground black pepper

2 large cucumbers

6-8 slices turkey or ham

6-8 very thin slices cheese

fresh chopped parsley

 

In a small bowl, mash the avocado with a fork.  Add minced garlic and fresh lime juice.  Season with sea salt adn pepper, to taste. Mix until well combined.

Using a peeler or mandolin, slice the cucumber into equally thin strips.  Place about 12 cucumber strips next to each other, on a flat surface, such as a cutting board.  

Spread 4 Tbsp of mashed avocado evenly over the slices.  Then add slices of ham and cheese.  Starting at one end, tightly roll all of the cucumber slices into one long "sushi" roll.

Using a sharp knife, cut the roll into individual servings.  Secure with a toothpick and place on a serving platter.  Repeat with the remaining cucumber strips.  Sprinkle with fresh chopped parsley and serve immediatly.

Cucumbers with Onions and Sour Cream

 2 Tbsp sour cream

1 1/2 cups sliced cucumber, not peeled

1/2 red onion, sliced very thin and cut into quarters (1/2 cup)

1/8 tsp ground black pepper

1/8 tsp salt 


1.  Mix sour cream, cucumber, and onion.  Add seasonings.

2.  Refrigerate to chill thoroughly.

Cucumber Garlic

 1 cucumber

3 garlic cloves

1 Tbsp apple cider vinegar

few Tbsp water

Himalayan pink salt


Peel the garlic cloves and chop the cucumbers to tiny pieces, mixing them in a large bowl.  Add the vinegar and season the salad with pinch of Himalayan pink salt.

Cucumber Salad

 2 English cucumbers or 4 regular cucumbers, (sliced very thin with a knife)

1 tsp salt

1 cup white vinegar

1/2 cup water

1/2 cup sugar

1 red onion, sliced

2 Tbsp fresh dill

 

Place sliced cucumbers and salt in a large bowl and stir. Leave for 1 hour so the salt can sweat the water from the cucumbers.  After an hour discard any water.

In a small saucepan add vinegar, water and sugar.  When sugar is fully dissolved turn off heat and set aside.

Add red onions and dill to the cucumbers.  Pour the vinegar mixture over the cucumbers.  Refrigerate for 2 hours.

Refrigerator Dill Pickles

 3 1/2 cups water

1 1/4 cups white vinegar

1 Tbsp sugar

1 Tbsp sea salt

4 cups cucumber spears

2 cloves garlic, whole

2 heads fresh dill


1.   Stir water, vinegar, sugar, and sea salt together in a saucepan over high heat. Bring to a boil;remove from heat and cool completely.

2.  Combine cucumber spears, garlic cloves, and fresh dill in a large glass (mason jar) or plastic container.  Pour cooled vinegar mixture over cucumber mixture .  Seal container with lid and refrigerate for at least 3 days.

Marinated Cucumber, Onion and Tomato Salad

 3 medium cucumber, sliced

3 ripe tomatoes, chopped or cut in wedges

1 medium onion, cut into 1/4 inch rings

2 cups water

1 cup distilled white vinegar

3/4 cup white sugar

1-2 tsp black pepper

1 tsp salt


Cut cucumbers, tomatoes and onions and mix together in a large bowl.  In a smaller bowl mix together the water, vinegar and sugar. Add to the vegetables and mix.  ( If you think its too much liquid then half the water, vinegar and sugar mixture) 

Sprinkle with salt and pepper. Stir well.  Refrigerate for at least an hour or even overnight. Summertime Salad. Serve.

OR

2/3 cup sugar

2/3 cup apple cider vinegar

1 cup vegetable oil

Bring to a boil and let it cool before adding to the vegetables.

1 cucumber, cut into slices

1 tomato, chopped

2 Vidalia onions, cut into thin slices

Add dressing when cooled to a bowl with the cut vegetables and marinate in the fridge overnight.  Can also add cooked and sliced beets.

Green Goddess Salad with Chickpeas

 Dressing:

1 avocado, peeled and  pitted

1 1/2 cups buttermilk

1/4 cup shopped fresh herbs, such as tarragon, sorrel, mint, parsley and /or cilantro

2 Tbsp rice vinegar

1/2 tsp salt

 

Salad:

3 cups chopped romaine lettuce

1 cup sliced cucumber

1 (15 oz) can chickpeas, rinsed

1/4 cup diced low-fat Swiss cheese

 6 cherry tomatoes, halved if desired 


1. To prepare dressing; Place avocado, buttermilk, herbs, vinegar and salt in a blender.  Puree until smooth.

2.  To prepare salad; Toss lettuce and cucumber in a bowl with 1/4 cup of the dressing.  Top with chickpeas, cheese and tomatoes.  (Refrigerate the extra dressing for up to 3 days).

*Tips:  To make ahead: Cover and refrigerate leftover dressing for up to 3 days.

Watermelon, Cucumber and Feta Salad

 1/2 watermelon, cut up in small chunks (save the rind to use as a salad bowl)

cucumbers, chopped

red onion, chopped

feta cheese, crumbled

salt, to taste

balsamic vinegar, to taste


Mix together in a large bowl. Add back to watermelon rind for Serving.

Tomato, Cucumber and Avocado Salad

 1 English cucumber, cut into 1/4 inch small slices

4 Roma tomatoes, cut small

1 red onion, large slices

3 avocados, chopped small

bunch cilantro, chopped small

juice from 1 lemon

olive oil

salt and pepper

 

In a large salad bowl add the cucumber, tomatoes, onion, avocado, cilantro and lemon juice.  Mix together. Add the oil, salt and pepper.  Mix well and Serve.

Cucumber and Onion Salad

 2 cups cucumber (sliced thin)

1/4 cup sliced onion (sliced thin)

2 Tbsp white vinegar

2 Tbsp sugar

2 Tbsp olive oil

1/2 tsp dill weed


Mix ingredients together well.  Let sit out at room temperature for 2 hours for sugar to melt.  Chill in refrigerator.

Cucumber and Peach Salad with Herbs

 Vinaigrette:

1 shallot,finely chopped 

Kosher salt

1 lemon

2 Tbsp Katz's Sauvignon Blanc vinegar or other white wine vinegar

 

Salad and assembly:

2 lb mixed heirloom cucumber, sliced into 1/4 inch thick wedges and rounds

1 English hothouse cucumber, halved lengthwise, sliced crosswise

Kosher salt

2 lbs yellow peaches, sliced into 3/4 inch thick wedges

4 oz mild feta, crumbled

freshly ground black pepper

handful of basil leaves, torn if large

handful of mint leaves, torn if large

1 lemon, halved 


Vinaigrette:

Place shallot in a small bowl and season with a big pinch of salt.  Finely grate zest from lemon into bowl; cut lemon in half and squeeze in juice.  Add vinegar and toss to combine.  Let sit 10 minutes.

 

Salad and assembly:

Place cucumbers in a medium bowl and season with salt.  Spoon half of vinaigrette over and toss gently to coat.

Place peaches in a serving bowl or on a platter and season with slat.  Spoon remaining vinaigrette over and toss gently with your hands to coat.

Add cucumbers to peaches; toss gently again just to combine.  Add feta; season with salt and pepper.  Top salad with basil and mint and squeeze lemon over.

Tomato Cucumber Salad

 2 tomatoes, chopped

1 cucumber, peeled and diced

1 onion, chopped

1 Tbsp lemon juice

salt to taste

ground black pepper to taste


Combine tomatoes, cucumbers, and onions in a salad bowl.  Season to taste with salt and black pepper.  Sprinkle with lemon juice.  Chill.

Serves: 4

Coleslaw with Cucumbers and Celery

 1/2 small head cabbage, shredded

1/2 cucumber, chopped

1 stalk celery with leaves, finely chopped

2 Tbsp chopped fresh cilantro

2 Tbsp chopped fresh flat-leaf parsley

1/2 cup mayonnaise

1 Tbsp white vinegar

1/4 tsp onion powder

1/2 tsp salt

1/2 tsp coarsely ground black pepper


Mix cabbage, cucumber, celery, cilantro, and parsley in a bowl.  Whisk mayonnaise, vinegar, onion powder, salt, and black pepper in a separate bowl; stir dressing into slaw until thoroughly mixed.  Chill for 1 hour before serving.

Serves 6

Creamy Cucumber Salad

 2 large cucumbers, peeled and thinly sliced

1 sweet onion, thinly sliced

1 Tbsp sea salt

1 1/2 cups mayonnaise, or more to taste

2 Tbsp vinegar

1 Tbsp white sugar

1 tsp dried dill weed

1 tsp garlic powder

1 tsp ground black pepper

Cucumber, Onion and Tomato Salad

3 medium cucumbers, peeled and sliced 1/4 inch thick

1 medium red onion, sliced and separated into rings

 3 medium tomatoes, cut into wedges

1/2 cup vinegar

1/4 cup sugar

1 cup of water

2 tsp salt

1 tsp black pepper

1/4 cup oil


Combine ingredients in a large bowl and mix well.  Refrigerate at least 2 hours before serving.

Cucumber Salad with Mayo

 1/2 cup mayo

1-2 Tbsp sugar

2 tsp cider vinegar

1/2 tsp dill weed

1/2 tsp salt

4 medium cucumbers, thinly sliced

3 green onions, chopped


In a large bowl, combine mayo, sugar, vinegar, dill and salt; mix well.  Add cucumbers and onions; toss;  Cover an chill for at least 1 hour.

Chopped Cucumber Salad

 3 Tbsp extaa virgin olive oil

# Tbsp fresh lemon juice

sea salt and black pepper, to taste (1/4 tsp each)

1 lb Persian cucumbers (or seedless cucumbers)

4 green onions

1 bunch Italian parsley 

1 lb fresh ripe red tomatoes, mostly seeded


In a small glass bowl, whick your olive oil, lemon juice, sea salt and pepper; set aside.

Gently scrub your vegetables then thoroughly rinse under old rumming water.  Slice cucumber in jhalf lengthwise then dice into cubes.

Chop your green onions and dice the tomatoes.  I discarded most of the tomato seeds for this salad.

Remove most stems from parsley, then chop the leaves.

In a large salad bowl, gently combine diced cucimber, onions, tomatoes and parsley.

Drizzle your prepared dressing over the veggies and gently toss until evenly coated 

Refrigerate for at least 15 minutes to allow the flavors to blend.

Cucumber Salad

 1 heaping Tbsp mayonnaise

2 tsp red wine vinegar (optional)

1/2 tsp milk

pinch of salt and pepper

1 large peeled and thinly sliced cucumber

1 large (or 2 small) chopped tomato


Put all ingredients in a bowl and toss to coat.  Let the salad sit at least 30 minutes (although the longer the better) before serving.
