Pasta with Fresh Tomato Sauce

1 (16 oz) package dry penne pasta

8 Roma (plum) tomatoes, diced

1/2 cup Italian dressing

1/4 cup finely chopped fresh basil

1/4 cup diced red onion

1/4 cup grated Parmesan cheese 


 1.   Bring a large pot of lightly salted water to a boil.  Place the penne pasta in the pot, cook 10 minutes, until al dente, and drain. 

2.  In a large bowl, toss the cooked pasta with the tomatoes, Italian dressing, basil, red onion, and Parmesan cheese.


Serving: 8

Lasagna Rolls

 12 lasagna noodles, cooked

olive oil

1/2 lb sausage

1/4 cup chopped onion

1 tsp garlic

jar tomato sauce

1 tsp fresh parsley

15 oz ricotta cheese

10 oz frozen spinach

1 egg

salt and pepper

3/4 cup mozzarella cheese

1/2 cup Parmesan cheese 

Brown sausage in olive oil with onions. Add garlic, tomato sauce and parsley.  Set aside.  In a bowl, mix together ricotta, spinach, egg, salt and pepper, mozzarella and Parmesan cheeses. Lay out a lasagna noodle and top with cheese mixture and then meat mixture. Roll up the filled noodle and place in a greased 9x13 pan.  Top with rest of meat sauce and sprinkle with mozzarella and Parmesan cheese. Top with parsley.  Cover with foil.  Bake in 375 degree oven for 35 minutes.

Grandma Vicki's Homemade Tomato Sauce

1/2 cup onion sliced or minced onions
1 lb. ground beef (add half/half ground sausage)
2 cloves minced garlic
2  1lb. can crushed tomatoes
2  8oz. can tomato sauce
1 sm. can mushroom (optional)
1/4 cup parsley
1 1/2 tsp. oregano or sage
1 tsp. salt
1/4 tsp. thyme
1 bay leaf
1 cup water

Cook the onions in a little oil until tender. Add the ground beef and garlic until browned.  Add the other ingredients.  Simmer for 2 hours. Stirring often.  Use with and Italian dish.
