Buttermilk Pancakes

 2 eggs

2 cup buttermilk

4 Tbsp vegetable oil

2 cups flour

2 1/2 cups sugar

2 tsp baking powder

1 tsp baking soda

1 tsp salt


Combine dry ingredients in a large bowl.  Make a well in center of flour mixture, add to it the wet ingredients.  Mix quickly and thoroughly.  Let sit a moment.  Pancakes taste best cooked on a griddle generously coated with butter.  

* Substitute buttermilk for 2 cups milk + 2 Tbsp vinegar.  Let sit for 5 minutes before adding to pancake mix.  (Travis wants these for breakfast every morning!)

Nikki's Sugar Cookies

 1 cup butter shortening

2 cups sugar

3 eggs

1 cup sour cream

1 tsp baking soda

1 tsp baking powder

1 tsp vanilla

1/4 tsp salt

 

Mix ingredients.  Add enough flour to make a soft dough (not too much!) Refridgerate 1 hour and bake at 350 degrees for 5-8 minutes. Yum!

 

Sugar Cookie Frosting

 3/4 bag powdered sugar

1 cap almond flavor

1 cap coconut flavor

milk

Crisco or butter

food coloring of choice 


Mix sugar and enough milk to make spreadable.  Add large spoonful of Crisco and flavorings.

Sweet & Sour Chicken

 For Chicken

4-6 chicken breasts

1-2 eggs, beaten

Cornstarch (a must)

oil for your frying pan


For sauce

3/4 cup sugar

4 Tbsp ketchup

1/2 cup vinegar

1 Tbsp soy sauce

1/2 tsp garlic powder


Make sauce by combining sugar, ketchup, vinegar, soy sauce and garlic powder.  Mix and set aside.  

Dip chicken in beaten egg.  Roll it in cornstarch.  Fry in hot oil until just golden brown.  Place chicken in pan and pout the sauce over it. Bake uncovered at 325 degrees for 1 hour turning every 15 minutes.  (If you want it to cook faster, raise temp to 400 and cook it for a 1/2 hour).  It should not be pink in the center. 

Served with potatoes

Lauren's Holiday Cheese Ball

2 8oz Philly cream cheese
1/2 cup mayonnaise
1/3 cup Parmesan cheese
1/4 cup green onions
8 slices bacon

Let cream cheese soften to room temperature.  Cook bacon, save the bacon grease and set aside.  Mix cream cheese, mayo, Parmesan cheese.  Mix in green onions and bacon.

I add more bacon plus 2 Tbsp bacon grease.

Roll into a ball shape, wrap with saran wrap, refrigerate several hours.  Serve with pretzels, Ritz crackers, etc.

Chocolate Wacky Cake

Dry:
3 cups flour
2 cups sugar
2 tsp. salt
2 tsp. baking soda
3 tbsp. cocoa

Wet:
3/4 cup oil
2 tbsp. vinegar
2 cups water
2 tsp. vanilla

Mix dry ingredients in kitchen aid.  Mix wet ingredients in separate bowl.  Then pour wet ingredients into dry ingredients and mix together. Stir until all lumps are gone.   Bake at 350 degrees for 30 minutes.

Chocolate icing: (Lauren)
1 cup butter
4 tbsp. cocoa
6 tbsp canned milk
3-4 cup powdered sugar
1 tsp. vanilla

Boil butter, cocoa and milk.  Add powdered sugar and vanilla.  Mix well. Can be put over warm or cool cake.


Chocolate Frosting: (Lisa)
1/2 cup butter
1/4 cup milk
3 tbsp. unsweetened cocoa
1 tsp. vanilla
2 cups powdered sugar

In a large sauce pan, melt butter over medium heat.  Stir in milk, cocoa, and vanilla until well blended.  Add powdered sugar and stir in.  Use hand mixer to beat until smooth.

Turkey Chili

1 lb. ground turkey
1/2 cup diced red onion
2 tbsp. cilantro
1 tbsp. chili powder
1 tbsp. garlic
1/2 tsp. red pepper flakes
15 oz. can white beans, kidney beans, black beans, pinto beans
lentils
4 cups chopped zucchini
4 cups tomato soup (4 cans)
1 tsp. salt

Brown turkey.  Add fresh ingredients.  Only partially drain beans.  Add to crock pot. High for 4-5 or low 6-8 hours.
