Greek Bean Salad

 4 can Cannellini beans

1 tsp Kosher salt

1 red onion, chopped large

salt and pepper

1/4 cup red wine vinegar

1/4 cup oil

1-2 tsp garlic

1 avocado, sliced

1 lemon juiced and zested

1 Tbsp parsley, chopped

1 Tbsp dill, chopped


In a bowl combine beans and 1 tsp salt.  Microwave for 3 minutes.  Add to bowl, red onion, salt, pepper, red wine vinegar, oil and garlic.  Mix and let sit for 30 minutes.  

Add avocado, lemon, parsley and dill.  Serve.
