Yellow Squash Cassorole

 4 cups squash, cooked, drained and mashup a bit

1 egg, beaten

1 tsp salt

1 tsp pepper

1/2 cup mayo

1 tsp sugar

1/2 cup onion, chopped

1 cup shredded cheese

1 sleeve Ritz crackers, crushed up

1/4-1/3 cup melted butter


In a large bowl combine squash, egg, salt and pepper, mayo, sugar, onion and cheese.  Pour into a casserole dish that has been sprayed with non-stick oil.  Combine crackers and butter and put on top. Bake at 350 degrees for 40 minutes.
