Shrimp Ceviche

1 lb fully cooked shrimp, cut into bite sized pieces

1/4 cup lime juice

1/4 cup lemon juice

1/4 cup red onion, diced small

2-3 Roma tomatoes, diced

1/4 cup cilantro

1 avocado, diced

salt

 

In a bowl add the shrimp, lime juice and lemon juice.  Mix together. Cover with plastic wrap and marinate in the fridge for 30 minutes. 

Add to the shrimp the onion, tomato and cilantro.  Mix together.

Just before serving add the diced avocado and salt. Gently mix to not tear the avocado. Serve cold.
