Mexican Rice

 3/4 cup oil

1 cup rice

1/2 green bell pepper, chopped

1/2 onion, chopped

1 cup boiling water

1/2 tsp salt

1/2 Tbsp cumin

1/2 Tbsp garlic powder

1/2 Tbsp pepper

1/2 can (8 oz) tomato sauce


In skillet add oil  rice, bell pepper and onions.  Soften and brown up stirring constantly.  Add seasonings ans tomato sauce.  Add the rice mixture into a saucepan of boiling water.  Bring back to a boil, put lid on and simmer for 16 minutes.  Serve.


Note:  This recipe has been halved.  Double it for more servings suited for family size.
