Pineapple Casserole

 6 Tbsp pineapple juice (juice drained from the pineapple can)

1 cup sugar

3 Tbsp all-purpose flour

1/4 cup melted butter

2 (20 oz) pineapple chunks, drained

2 cups shredded cheddar cheese

1 sleeve Ritz crackers, crushed

Mix together juice, sugar, flour and butter. Mix together. Add pineapple chunks and cheddar cheese. Pour into a casserole dish and bake in a 350 degrees for 20 minutes. In a small bowl mix crushed crackers and melted butter. Top casserole dish with crackers.  Reduce heat to 300 degrees for another 20 minutes.
