Pear and Beet Salad

 1 brown pear, sliced thin

1/2 cup chopped walnuts, ( toasted in a dry pan for 5 minutes)

juice of 1 lemon

1 Tbsp water

1 Tbsp honey

1 tsp thyme

salt and pepper

2 Tbsp olive oil

5 oz mixed greens

1/2 red onion, sliced

3 beets, cut up

 

In a small bowl  mix the vinaigrette ingredients, lemon juice, water, honey, thyme salt and pepper. Mix together.  Add the oil. Set aside.

In a large salad bowl add the mixed greens, sliced pears, red onion, beets, toasted walnuts. Mix. Add the vinaigrette and stir together. Serve.
