3 Bean Salad

1/2 red onion, chopped into large slices

3/4 cup English cucumber, take out seeds, chop

1/2 cup parsley, shred with fork and chop small

1 (15 oz) can chickpeas

1 (15 oz) can kidney beans

1 (15 oz) can cannellini beans

 

Vinaigrette:

1/4 cup olive oil

1/4 cup red wine vinegar

1/2 tsp oregano

1/2 tsp salt

1/4 tsp pepper


Mix above ingredients into a large salad bowl; Add the vinaigrette to the beans and vegetables and mix well.  Serve.
