Spaghetti Squash Primavera

1 spaghetti squash, roasted (400 degrees for 45 minutes, with olive oil, salt and pepper)

 1 Tbsp garlic, minced

1/2 cup onion, chopped

1 cup mushroom, chopped

1 cup broccoli, chopped

1 cup asparagus, chopped

1/2 cup yellow squash, chopped

1 tsp salt and pepper

1/2 cup cherry tomatoes

1/2 cup milk

1/4 cup Parmesan cheese

2 Tbsp lemon juice

 

Add all ingredients to a large skillet. Cook vegetables.  In a large bowl add vegetables and roasted spaghetti squash. Stir well and serve.
