2 Tbsp Avocado oil

1 tsp garlic and onion powder

1/2 cup butter
Add oil to a large dutch oven pot. Add vegetables. Place whole chicken on top. Add seasonings on top of chicken. Top with teaspoons of butter. Bake in oven at 400 degrees for 1 hour.
( For another meal debone chicken, add back to pot. Add 2 cups water. Heat on stove for chicken soup.)

Zucchini Bread
Makes 2 loaves
3 cups all-purpose
flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 Tbsp ground
cinnamon
3 eggs
1 cup vegetable oil
2 ¼ cups white
sugar
3 tsp vanilla
extract
2 cups grated
zucchini
1 cup chopped
walnuts
- Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees.
- Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
- Beat eggs, oil, vanilla, and sugar together in a large bowl.. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter prepared pans.
- Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

Squash Croquettes
Prep Time:

4 cups shredded
yellow squash, (4-5 medium squash)
1 medium sweet
onion,finely diced
2 large eggs, beaten
1 cup self-rising
flour
¼ cup grated
Parmesan cheese
1 Tbsp chopped
chives or parsley
1 tsp seasoned salt
1 tsp garlic powder
½ tsp ground cumin
¼ tsp ground black
pepper
dash of cayenne
oil and butter for
frying
2/3 cup panko
breadcrumbs
- Shred the squash, you'll need around 4-5 medium squash. Blot the shredded squash with paper towels to remove excess moisture.
- In a medium mixing bowl, mix together the shredded squash, diced onion and egg.
- Add the self-rising flour, grated Parmesan, chopped chives, seasoned salt, garlic powder, cumin, black pepper and cayenne. Mix well.
- Heat a few drizzles of vegetable oil and pat of butter per batch, in a non-stick skillet.
- Using a Tbsp or a 2 oz ice cream scoop to divide the mixture. Sprinkle with panko then, drop the mixture into the pan.
- Fry in batches over medium-high, cooking until browned and cooked through. Around 3 minutes on each side.
- Add additional oil and butter to pan as needed between batches. Serve immediately.

Crepes
Makes 15 crepes
2 cups unbleached flour
1 cup milk
1 cup +2 Tbsp water
4 eggs
1/2 tsp salt
4 Tbsp melted butter
2 Tbsp sugar (skip the sugar if you are making savory crepes)
1. In a blender combine all ingredients, and blend on high until well mixed.
2. Let the batter rest for an hour or two in the fridge until the bubbles have dissolved and are no longer frothy. (we quite often skip this step and still have good results)
3. Get a non stick frying pan with a handle, and warm the pan to medium heat. Lightly coat pan with cooking spray or melted butter.
4. Pour about 1/4 cup of batter into the heated pan, then quickly pick the pan up by the handle, and swirl the batter to the outsides of the pan, so the batter evenly coats the bottom of the pan. Let cook for about 1 to 2 minutes, then carefully flip to the other side and cook for another 90 seconds or so.
5. Repeat with remaining batter, stacking cooked crepes on top of each other as you finish off the batter.
6. Fill crepes with yummy toppings such as Nutella, berries, real whipped cream, banana, etc...

Roasted Turkey
Turkey
2 sticks of butter,
softened
salt and pepper
olive oil (so the
butter doesn't burn)
zest and juice of 2
lemons
3 cloves of garlic,
minced
parsley, handful
onion, cut in half
1 lemon, cut in half
bay leaves or
parsley
6 slices of bacon
In a large bowl mix
together butter, salt and pepper, olive oil, zest and juice of 2
lemons, 3 cloves of garlic minced and a handful of parsley. Set
aside. In the cavity of the turkey season with salt and pepper, place
in onion, lemon and bay leaves or parsley. Loosen the skin on the
front and back of the turkey. Take a hanful of butter mixture and
roll into a ball. Stick it underneath the skin and pull down to
cover both sides, front and back of the turkey. The rest spread all
over the outside of the turkey on the top, legs and wings. Put in a
roasting pan and sprinkle the top of the turkey with olive oil. Bake
in oven at 220 degrees for 10 minutes. Will start to brown. Baste
the juice on top of the turkey and place the bacon slices on top of
the turkey. Put back in the oven. Turn down to 180 degrees for 2 1/2
hours. Check to see if its done when you put a knife into the thigh
and the juices are clear. Take the turkey out of pan and rest on a
platter for 2 ½ hours. The same amount of time it cooks for.

Gravy
cooked bacon, onion
and lemon, cut up in small pieces
rosemary sprig
3 sm chopped
tomatoes
little bits of
turkey
apple cider vinegar
juices from turkey
chicken stock
crushed walnuts
Put turkey on a
platter to rest. Keep the drippings in the pan and add the chopped
up bacon, onion and lemon. Heat the pan on the stove. Add rosemary
and tomatoes. Take off some bits of turkey (the unused bits) and add
to the pan. Mix together and get to a small boil. Add some apple
cider and the juices from the resting turkey. Boil and mash with a
potato masher. After it reduces some add some chicken stock. Sieve
the gravy with a strainer. In the bottom of a gravy dish place the
crushed walnuts and add the gravy on top. The hot gravy will heat
up the turkey. Serve!

Bacon and Cheese Frittata
4-5 slices of bacon,
chopped into small pieces
black pepper
1-2 red bell pepper,
chopped small
4-5 green onions,
sliced
7-8 eggs
Parmesan cheese
peas, handful
basil, chopped
goat cheese, sliced
in small chunks
Use a cast iron
skillet that can go into the oven. In skillet cook bacon and black
pepper on high. Then turn down heat to medium and add red peppers
and green onions. Cook for 3 minutes then add peas, basil and chunks
of goat cheese. Meanwhile in a separate bowl crack the eggs and add
black pepper and Parmesan cheese. Mix together. Then slowly add egg
mixture to skillet making sure it covers everywhere. Add grated goat
cheese on top to cover skillet. Bake in a 350 degree oven for 25-45
minutes. Using a knife release from the sides of the skillet and
shake the pan to release the bottom from the skillet. Turn in upside
down on a plate or serving tray and serve.

Cowboy Cookies
1 cup salted butter,
softened
¾ cup brown sugar
½ cup sugar
3 lg eggs
2 tsp vanilla
extract
2 ¾ cups flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
1 cup quick instant
oats
2 cups semisweet
chocolate chips
¾ cup shopped
pecans
¾ cup unsweetened
coconut flakes
Preheat oven to 400
degrees. Combine together, Creaming the butter and sugar first.
Form into a ball using a 1/3 cup container. Makes 12 large and 24
small. Bake at 400 degrees large for 12-14 minutes and small for 8-10
minutes. (I prefer the large cookies)

BBQ Pulled Pork with Gravy
BBQ
Pulled Pork
3 lbs pork shoulder,
cut up in chunks
3 tsp salt
2 tsp black pepper
1 cup apple juice
1 tsp cumin
1 tsp paprika
2 tsp garlic powder
Mix together and
place in slow cooker. Cook for 6-8 hours until it falls apart.
Shred it.
Gravy
(2-2-1 ratio)
2 Tbsp butter
2 Tbsp flour
1 cup juice (from
the pulled pork)
Whisk together and
heat in a saucepan. Pour over pork and Serve.
