Black Bean Burgers (healthy)


3 Tbsp olive oil
1 red onion, finely chopped
3 cups mushrooms, finely chopped
1 clove garlic, minced
1 Tbsp thyme leaves
2 Tbsp soy sauce
1 (14 oz) can black beans, rinsed and drained
¼ cup whole wheat flour
1 Tbsp nutritional yeast flakes (optional)
hamburger buns

In a pan saute onion in olive oil. Add mushrooms, garlic, thyme and soy sauce. Stir and cook. Add black beans and mix together. Take off heat. Mash slightly with a potato masher. Mix in flour and yeast flakes. Make and shape into a patty. Grill burgers.

Toppings:
tomato slices, lettuce, pickles, mayo and homemade 1000 island dressing

1000 island dressing:
mayo
ketchup
tomato paste
finely chopped capers
sea salt and pepper
