2 zucchini, grated
3 eggs
salt and pepper
2 Tbsp flour
olive oil
Grate the zucchini, don't have to peel the skin. Sprinkle with salt and pepper. Cook the eggs well and add to the zucchini. Salt and pepper again. Stir in the flour. Mix all together. Form into balls and flatten in a pan. Cook in oil for 4 minutes on each side until done.
